Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is composed of 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier. All three varietals come together to deliver mouth watering wine that is dry, extremely attractive, balanced, and elegant.

first course

2016 Meyer-Fonné Gewurztraminer, Reserve, Alsace, France

Pairing Notes: Season’s greetings everyone! Tonight we start off with a wonderful, opulent wine. It features loads of stone fruit aromatics to complement your first course this evening. The palate is full and rich, which brings balance to the flavors from the dish.

second course 

2015 Pelican Poulsard, Arbois, Jura, France

Pairing Notes: This wine is a special gem, hardly seen on its own; it encompasses a lot of tart red berries and crunchy red fruits to drive home the sweetness of the Butternut Squash filling. You’ll find a damp earth smell as well. The wine itself will really embrace the truffles incorporated throughout.

third course 

MV Mousse Fils Champagne, Blanc de Noir Reserve, Vallée de Marne, France

Pairing Notes: The third course features a diversity of flavors uniquely combining into an umami flavor profile, and the best thing to complement that unique flavor is this beautiful Champagne. Loads of delicate red fruits and well balanced structure offer a perfect supplement to crispy pork belly.

fourth course 

2012 Peymartin Bordeaux Blend, Saint-Julien, France

Pairing Notes: Nothing is more stunning than a Bordeaux wine paired with a tenderloin accompanied by Bacon Lardons, Brussel Sprouts and Yorkshire Pudding. The strong aromas of dark blackcurrant, combined with the woody aromas of cedar and sweet pipe tobacco, will be a heavenly tribute.

dessert course 

2013 Royal Tokaji Tokaji, Aszu, 6 Puttonyos, Tokaji, Hungary

Pairing Notes: A wine fit for royalty with a wonderful profile of flavors: honeycomb, honeycake candied citrus zest, and canned peach preserves. Paired along with the Honey Caramel Pudding, it will be a delight to finish off the night in such Royal fashion.
