Pairing Notes: We begin with this beautiful expression of bubbles from a Grower-Producer. Made in a traditional brut style, the winemaker, Adrien, intends to show you a representation of the three villages he works with – Sezanne, Avenay Val d’Or, and Cuis. The blend is 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier.
2003 Schloss Schönborn Riesling, Marcobrunn, Kabinett, Rheingau, Germany
Pairing Notes: Hawaiian tuna swims in a sea of German Riesling. This Riesling offers richness, complexity and tension. The wine’s density will lift all of the finer notes, playing nicely with the citrus in the dish and bouncing off the tart rose hips.

Pairing Notes: The beautiful guinea hen are delicious, and even more so with a glass of Burgundy. This wine shows gracefully with a silky essence. An array of Morello and red cherry jumps out of the glass, with a touch of spice to complement the wild huckleberry compote.

Pairing Notes: Expressing the best fruit from the Il Poggiale vineyard in Castellina, Chianti. With such a lush dish, Chianti Classico was the route to take. The wine showcases warm-turned soils and tobacco leaves that will complement the acorn spaetzle nicely. Firm, soft grain tannins will incorporate themselves with the porcini sauce and marry well with the beef.
