Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is composed of 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier. All three varietals come together to deliver mouth watering wine that is dry, extremely attractive, balanced, and elegant.

2015 Patz & Hall Chardonnay, Sonoma Coast
Pairing Notes: The holiday season is here and we begin with this beautiful glass that is loaded with notes of pineapple, guava, and lime zest that are perfect alongside the Apple-Shiso Coulis and Mixed Caviars. The palate is round and rich with honey and baked apple that complement the Yuzu-Kosho Prawns.

2014 Mt. Difficulty Pinot Noir, Bannockburn, Central Otago, New Zealand
Pairing Notes: For your Cannelloni and Sauce Forrestiere we present this delightful wine that shows black cherries, black raspberries, and crushed plum. Undertones of lavender, dried herbs, and cinnamon simply dance with the Perigord Truffles, making this one of our favorite pairings. A little magic in your glass for December!

2014 Smith Madrone Riesling, Spring Mountain District, Napa Valley
Pairing Notes: One of only a handful of producers who are making Riesling out of Spring Mountain District, Smith Madrone made this dry wine that is perfection with the Berkshire Pork Belly. The Dungeness Crab and Tamarind Glaze are met with a zing of crisp citrus fruit, orange blossom, and honeysuckle. A touch of white peach and pear linger on the finish.

2003 White Cottage Cabernet Sauvignon, Howell Mountain, Napa Valley
Pairing Notes: Christmas Supper is complemented by this stunning glass of Cabernet Sauvignon produced by Dennis Johns. The Butter Poached Beef Tenderloin gives way to aromas of cassis, spicy currant, and tobacco leaf. The juicy plum, dried red berries, and creamy chocolate are sure to “Jingle Bells” with every bite you take.

2012 Dr. Loosen Riesling, Spatlese, Graacher Himmelreich, Mosel, Germany
Pairing Notes: We bring the evening to its pinnacle with another Riesling, this time it is deliciously sweet. The flavors of ripe pineapple, peach tea, and honey are incredible with the Honey Caramel Pudding. The acidity is refreshing beside the Sweet Crème Fraiche. An enchanted finish to the evening.
