Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. Our arrival Champagne is predominantly Chardonnay and Pinot Noir, while Pinot Meunier is added to complete the wine’s charm. The finish is elegant and perfectly balanced with notes of stone fruit, lemon zest and minerality from Champagne’s prestigious soil.
2018 Alois Lageder Pinot Grigio, “Porer,” Süditrol, Alto Adige, Italy
Pairing Notes: Since 1823, this family owned estate has been producing a diverse range of wine styles and varieties in Italy’s northernmost wine region. Their recent commitment to biodynamic practices has further solidified their prominence as the leading quality producer in the region. Tonight’s Golden Raisin Agrodolce is well balanced by Alois Lageder’s Porer. Few white wines would be able to match our Agrodolce’s intensity, but the Porer’s blend of skin fermented batches provides the intensity that is needed.
2013 Librandi, Gaglioppo, Duca San Felice Vineyard, Cirò, Calabria, Italy
Pairing Notes: From the Calabria region of Southern Italy, the Librandi family brings you this spicy, ruby red gem to the table. The family has been making traditional wines for centuries, but the region itself was colonized in the early 8th century BC by expert winemakers named the Greek. The Gaglioppo grape has close genetic ties to Sangiovese, but arguably closer ties with La Cosa Nostra. Whether or not you believe this blood red wine is thicker than water, its beaming acidity can cut through an upcoming Custard Royale. Take a sip and you’ll be saying “Hello to my little friend!”
2017 Bedrock, Zinfandel, California
Pairing Notes: Morgan Twain-Peterson has lived an interesting life among wine professionals. Raised under the shadow of Ravenswood’s founder, Joel Peterson, Morgan has risen to become a certified Master of Wine. His childhood pastime and years of hard work have birthed the result of Bedrock Wine Co., a grand assemblage of quality vineyard sites throughout California. Tonight’s Zinfandel is a blend of over 15 vineyard sites between Sonoma County and the Sierras. By pairing local ingredients and a local wine, we achieve an equally opulent combination for tonight’s sweetbreads.
2013 Scarbolo, Refosco, Friuli Venezia Giulia, Italy
Pairing Notes: Finishing tonight’s savory fourth course is a fairly uncommon grape named Refosco. Valter Scarbolo’s diverse soils and adventurous spirit in North-Eastern Italy have inspired this wine’s personality to be larger than life. A muscular structure and a rich spice-forward approach are only a peek into how tonight’s fourth course wine beautifully mirrors our seasonal take of a “Flat Iron.”
MV Warre’s, Reserve Ruby Port, “Warrior,” Douro Valley, Portugal
Pairing Notes: The Douro Valley is home to one of the most prized fortified wines in the entire world, the classic Port. Arriving in Portugal in 1729, William Warre, born into a family of English merchants in India, started a family Port dynasty. Born into a family of English merchants, Warre established a Port and shipping empire that would lead to shipping over 10% of all Ports globally by the close of the 18th century. Warre’s “Warrior” is a youthful example of how reserve Ports make exceptional dessert wines for the Fall season by reflecting sweet fruits and warming spices.
