Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, peach, and lemon zest.
first course
2016 Allimant Laugner Riesling, Praelatenberg, Alsace, France
Pairing Notes: This domaine was created by joining the Allimant and Laugner families, who have produced wine in the village of Orschwiller since the 18th century. Today, it is run by 10th generation winemaker Hubert Laugner, along with his wife and three children. The wine features a stony, steely character with notes of lime zest and petrol, making it fantastic alongside the Cold Smoked Sea Scallop.

2016 Hill Family Albarino, Stewart Ranch, Carneros
Pairing Notes: After four decades of farming grapes for some of Napa Valley’s finest wine producers, fourth generation farmer Doug and his family decided they should enter the wine business. Hill Family Estate is the culmination of Doug’s vision – a way to share his love of the valley, farming and wine. This Spanish varietal is loaded with flavors of white peach and tangerine. It plays well with the Atlantic Turbot and Artichoke.

2014 Benanti Nerello Mascalese, Etna Rosso, Sicily, Italy
Pairing Notes: The winery was established in 1988 by Salvino and Antonio’s father Giuseppe. Giuseppe originally experimented with blending French varietals but eventually made the decision to feature Etna’s native varietals. The winery has since, received some of the highest praise from wine critics all over the world. The glass shows a medium body with a perfect balance of fruit and earth, paying homage to the Spring Pea Agnolotti.

2014 Leeuwin Shiraz, Margaret River, Western Australia
Pairing Notes: Leeuwin is one of five founding wineries of the now famous Margaret River. In 1972, with the help of Napa Valley’s own, Robert Mondavi, the Horgan family transformed their cattle farm into magnificent vineyards. It brings us pleasure to pour you this wine that is laced with notes of blueberries, plum and cardamom that complements the Montana Beef and Stinging Nettle “Cannelloni”.

2013 Skyhook Late Harvest Sauvignon Blanc, Lake County
Pairing Notes: Unlike most wines that are expressive of this distinct style of dessert wine, this particular wine is devoid of the influence of noble rot, or botrytis cinerea. A small amount of Sémillon is added to round out the finish. Still, the wine shows incredible notes of perfumed citrus, honeysuckle and dried peach. The bright acidity makes it perfect alongside the Grapefruit Mousse and Green Apple Meringue.
