MV Delamotte Champagne, Brut, Le Mesnil-sur-Oger, Cóte des Blancs, France

Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly grand cru Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, pear, and ginger.

first course

2016 Poggio Al Tesoro Vermentino, ‘Solosole’, Tuscany, Italy

Pairing Notes: With our first course we present this delicious and vibrant beauty. The dry but fruity wine is a perfect complement to the Butter Basted California Halibut. It features aromas of white flowers, acacia and apricot. The palate shows a light-bodied wine that is complex with notes of pear, white peach, lime zest and almond.

second course

2015 Chehalem Pinot Noir, ‘Three Vineyards’, Willamette Valley, Oregon

Pairing Notes: For your Fava Agnolotti, we present this stunning glass that displays aromas of juicy black raspberry and cherries. The finish has a lot of depth and presents an earthiness to the palate. That earth and touch of mushroom play tremendously well alongside the truffle crème and chanterelles.

third course

2015 Tyler Chardonnay, Santa Barbara County

Pairing Notes: We complement this course with an energetic and leaner style of Chardonnay. The wine features a great backbone of acidity, and the mineral pays homage to those fantastic Coconut Hawaiian Blue Prawns. The palate features notes of lemon citrus, star anise, and just a touch of savory spice.

fourth course

2011 Valduero Tempranillo, Ribera Del Duero, Spain

Pairing Notes: This is a stunning wine to match the stunning dish that is the Roasted Lamb Loin. Aromas of blackberry, dark plum, and a touch of tobacco jump out of the glass. The palate is met with flavors of blackberry and sour cherry. The wine has a long finish and features velvety tannin, layered texture, and an elegance that reminds you of the capacity of the wines of Ribera Del Duero.

2013 Anam Cara Late Harvest Gewurztraminer, Nicholas Estate, Chehalem Mountains, Oregon

Pairing Notes: We conclude the evening with a phenomenal treat. This wine has aromas of apricot, white flowers, and bosc pears which join warm juicy peaches and tropical fruits on the palate. The natural acidity keeps things fresh and brings everything along for the ride next to your Meyer Lemon Semolina and Almond Cake.
