MV Delamotte Champagne, Brut, Le Mesnil-sur-Oger, Cóte des Blancs, France

Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly grand cru Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, pear, and ginger.

first course

2016 Licia Albariño, Rias Baixas, Spain

Pairing Notes: Lícia is a shortening of Galicia, the autonomía in northwest Spain known for its Celtic influence and overall greenness due to the maritime climate. Notes of grapefruit, quince jelly, and fresh herbs greet the nose and complement the Hawaiian swordfish. The palate offers flavors of citrus and green apple that pair nicely with the orchard fruits and almonds.

second course

2015 Gregory Graham Chardonnay, Sangiacomo Vineyard, Carneros

Pairing Notes: Greg Graham was once the winemaker at Rombauer. In 1992, he started his own label. This Chardonnay is rich with flavors of vanilla and creamed corn – the perfect accompaniment to the corn agnolotti and the wild pecan butter. This classic California style, oaky and buttery, is a complement to Act III this evening.

third course

2016 Castello di Nieve Pinot Nero, i Cortini Vineyard, Langhe, Piedmont, Italy

Pairing Notes: This wine is loaded with cherries and cranberries with undertones of earth and tobacco. It pays homage to the duck breast and the cherries on this dish. The estate has been producing since 1964 when Giacomo Stupino decided to capitalize on his experience as a site surveyor and started purchasing favorable vineyard sites, such as this one.

fourth course

2011 Valduero Tempranillo, Reserva, Ribera Del Duero, Spain

Pairing Notes: From one of our favorite producers, we present this delightful red that shows off its dark red cherries, cedar, and dill. Aged for a minimum of 30 months in a variety of barrels, this wine has just a hint of leather making it excellent alongside the peppered beef and morel mushrooms. Another knockout of a wine from Yolanda Garcia Viadero.

dessert course

2016 Schloss Lieser Riesling, Kabinett, Piesporter Goldtropfchen, Mosel, Germany

Pairing Notes: With aromas of passion fruit, ripe peach, and honeysuckle, this wine is a homerun when enjoyed with the frangipane and apricot tarte. The wine is elegant and juicy and is a great way to finish off a warm summer evening. Cheers!
