arrival wine
MV Laurent Perrier Champagne, Brut, La Cuvée, Tours Sur Marne, France
Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, peach and lemon zest.
first course
2013 Alphonse Mellot Pinot Noir, Les Herses, Sancerre, Loire Valley, France
Pairing Notes: Local records mention the Mellot family in connection with wine dating back to 1513, yet it was in 1881 that Alphonse Mellot received a license to ship his wines worldwide, marking the beginning of successive generations of family ownership from father to son. This unique Pinot Noir delivers aromas of violet that are met with notes of red berry and sweet herbs. It is perfect with the Porcini Dumpling.
second course
MV Laurent Perrier, Brut Cuvée Rose, Tours Sur Marne, France
Pairing Notes: We began at arrival with the La Cuvée from one of our favorite producers. We now present this magnificent Rose from the same winery. Consistently regarded for its high quality, we have so much we love about this champagne. The color is bright and intense, and the following notes of strawberry and cherry are kissed by beautiful bubbles, washing down and refreshing every beautiful bite of the Barramundi, Mushrooms and Truffle Sauce.
third course
2015 Terlan Pinot Bianco, Vorberg, Alto Adige, Italy
Pairing Notes: Founded in 1893, this winery is a cooperative that includes over 140 growers! The Vorberg is the Riserva, or upper tier, variation of the wine. While this is a more recent release, the house is known for cellaring and aging many of their wines. It is loaded with notes of white peach, pear and golden delicious apple. Soft and creamy, the wine finishes with a distinct note of spice that interacts well with the “Pho Spiced” Pork Cheeks and Tamarind Glaze.
fourth course
2014 Bourgneuf Red Blend, Pomerol, Bordeaux, France
Pairing Notes: Chateau Bourgneuf is one of the oldest, family owned properties in the Pomerol appellation. The Vayron family has owned and managed the estate starting in 1821. This vintage is earthy with notes of espresso and a soft, red berry finish. There is also a hint of black plum, perfect for the Montana Beef and Potato Gnocchi.
dessert course
2012 Chesebro Late Harvest Sauvignon Blanc, Cedar Lane, Arroyo Seco
Pairing Notes: Mark notes that his time spent working at Bernardus Winery was truly his winemaking education: it taught him about winemaking, and also about the extreme importance and impact of farming. This wine requires the growth of the “noble rot” that concentrates and evolves its unique aromas and flavors. The nose explodes with honeysuckle and white peach. In the mouth flavors of honey and almond make for a delightful pairing with the Tarte.
