MV Laurent Perrier Champagne, Brut, La Cuvée, Tours Sur Marne, France
Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, peach and lemon zest.
2015 Yacoubian Hobbs Areni, Sarpina, Rind, Vayots Dzor, Armenia
Pairing Notes: This 100% Areni is incredibly unique. Named Sarpina, after posts that were once used to train the vines, as noted in Armenian history books. The estate is home to a cave, that is the oldest known winery dating to over 6,000 years ago. Coming from rocky, volcanic soils this varietal shows stunning notes of bright red cherries and raspberries. But the signature note is a touch of dried fruit, lending itself to the Porcini Dumpling, Parmigiano Broth and Mushrooms.

Pairing Notes: We began at arrival with the La Cuvée from one of our favorite producers. We now present this magnificent Rose from the same winery. Consistently regarded for its high quality, we have so much we love about this champagne. The color is bright and intense, and the following notes of strawberry and cherry are kissed by beautiful bubbles, washing down and refreshing every beautiful bite of the Barramundi, Mushrooms and Truffle Sauce.
2015 Terlan Pinot Bianco, Vorberg, Alto Adige, Italy
Pairing Notes: Founded in 1893, this winery is a cooperative that includes over 140 growers! The Vorberg is the Riserva, or upper tier, variation of the wine. While this is a more recent release, the house is known for cellaring and aging many of their wines. It is loaded with notes of white peach, pear and golden delicious apple. Soft and creamy, the wine finishes with a distinct note of spice that interacts well with the “Pho Spiced” Pork Cheeks and Tamarind Glaze.
2014 Kanonkop Red Blend, Paul Sauer, Simonsberg, Stellenbosch, South Africa
Pairing Notes: The name Kanonkop was derived from a kopje (hillock), from which a cannon was fired in the 17th Century to alert farmers in outlying areas that sailing ships had entered Table Bay for a stopover at Cape Town. Four generations deep, Paul Sauer is a dedication to the grandfather of the current owners. An elegant classic style wine with blackcurrant, spice, and vanilla. Perfect for the Montana Beef and Potato Gnocchi.
2014 Beaurenard Grenache, VDN, Rasteau, Rhone, France
Pairing Notes: Located in the Châteauneuf du Pape, Beaurenard is currently into the 7th generation of being a family run estate. Daniel and Frédéric Coulon grow this Grenache in Rasteau, on well exposed terraces of stony, clay-chalk soil. The grapes are harvested when incredibly ripe, containing more than 260 grams of natural sugar per litre before alcohol is added to arrest fermentation. It is filled with dark and rich plum flavors perfect for the Chocolate Tarte.
