MV Dhondt-Grellet Champagne, Brut, Flavigny, Cóte des Blancs, France

Pairing Notes: We begin with this beautiful expression of bubbles from a Grower-Producer. Made in a traditional brut style, the winemaker, Adrien, intends to show you a representation of the three villages he works with – Sezanne, Avenay Val d’Or, and Cuis. The blend is 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier.

2014 Domaine Du Pelican Savagnin Ouillé, Arbois, Jura, France

Pairing Notes: Purity and brightness are two characteristics that make this wine a great match for your Tuna Tombo. It showcases a beautiful nose with white fruits, tart and tangy citrus and fresh baked biscuit. The wine has a plethora of acidity with a bit of an “oceanwater” finish. This is the best of what the Jura has to offer.

2014 Paul Jaboulet Crozes Hermitage Blanc, Domaine Mule Blanche, Rhone Valley, France

Pairing Notes: Flavors and aromas from the dish just skyrocket into your senses. The perfect 50/50 blend of Marsanne and Roussanne was found to complement it. The fruit on the wine is what really brings out the creamy nature of the bay Scallops and Gnocchi.

2009 Ramoni Sangiovese, Brunello di Montalcino, Tuscany, Italy

Pairing Notes: The beautiful guinea hen are delicious, and even more so with a glass of Sangiovese. The wine shows wonderful age that will match the hen and the nettle strudel. The body of the wine is round and features a juicy acidity, leaving you yearning for another sip.

2012 Massolino Nebbiolo, Barolo, Piedmont, Italy

Pairing Notes: With such a lush dish, Barolo was the route to take. A beautiful red core of fruit, violet perfume, and earthy notes bring out the porcini essence in your dish. The wine’s juicy acidity and and alcohol will cleanse the palate, setting you up for each next perfect bite.

Pairing Notes: We’re ending the evening with a delicious wine that features a lot of you citrus: candied lemon, tangerine, mandarin, and lemon-lime. Luscious, honeyed flowers and sweet herbs, too. This is a complex yet delicious and refreshing dessert wine that will leave you satisfied.
