Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, peach, and lemon zest.
first course
2017 Perlage Pinot Grigio, Delle Venezie, Italy
Pairing Notes: The Perlage estate was founded in 1985 by the 7 Nardi brothers. Since the beginning, the house has been known for their certified organic wines. This wine opens with a hint of sour peach and wild strawberry on the nose that plays off of the hint of spice from the Poblano Crema. The palate shows light fruit notes of pears and peaches. The finish has an acidity to complement the Pumpkin Agnolotti.

2016 Eden Rift Pinot Noir, Cienega Valley
Pairing Notes: Eden Rift is among the oldest, continually producing estate vineyards in California. It is no surprise why we are enamored with this wine. It is perfect to stand up to the combination of flavors and textures in this Act. The notes of pomegranate and blackberry are interlaced with inklings of black tea and baking spice, making it fantastic with the Porcini and Truffle Beurre Blanc.

2017 Pierre Sparr Riesling, Alsace, France
Pairing Notes: This beautiful glass comes from a winery that was founded in 1680 and has been in the Sparr family the entire time, passed down through nine successive generations. We begin with aromas of citrus and peach. The first sip delivers a dry, fresh, and balanced experience tailored perfectly for the Southern Fried Poussin and Bourbon Maple Sauce.

2015 Anne Gros & Jeal Paul Tollot Red Blend, Les Fontanilles, Minervois, Languedoc, France
Pairing Notes: While holding on to their roots in Burgundy, these two winemakers set out to make a difference in the perception of the wines of Minervois. The end result is a glass that has finesse and precision. The Grenache based wine is full bodied, yet silky and refined, with flavors of blackberry and cassis, perfect for the Lamb Shank.

2014 Nacina Gewurztraminer, Wein der Eisbox, Danny’s Vineyard, Monterey
Pairing Notes: For your final act, we present this delicious supplement to your Pumpkin Mousse and Dulce de Leche. Intense notes of lychee, dried apricot, and exotic spices strike the palate in the most fantastic way. Underlying notes of clove and cinnamon play well with the Coffee Kataifi and Spiced Cashews.
