Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, peach, and lemon zest.
first course
2016 Côtière Chardonnay, Santa Barbara County
Pairing Notes: Côtière is a very small, winemaker-owned winery. Kevin Law made this delicious wine that features notes of tangerine, honeysuckle, and Meyer lemon. The wine spends time in new French oak and has a creamy texture that plays well with the Butter Snapper, Cauliflower-Apple Puree, and Corn Jus.

2016 Marrans Gamay, Corcelette Vineyard, Morgon, Beaujolais, France
Pairing Notes: This wine is organic and delightful. That means there is an ecological and ethical approach to farming these grapes, and it is delectable. The end result is a wine lush with raspberries, plums, and dried herbs. It is soft and light, making it perfect for the Beef Tartare and Duck Fat Truffle French Fries.

2017 Silt Gewurztraminer, Wilson Vineyards, Waukeena Ranch, Clarksburg
Pairing Notes: Silt Wine Company has one objective, to make you love Clarksburg as much as they do. They have done just that with this particular varietal. While it is stunning on its own accord, featuring notes of lychee, pineapple, and apricot, we are even more impressed with it as it complements the Duck Breast and Golden Raisin-Coriander Coulis.

2014 Valduero Tempranillo, Crianza, Ribera Del Duero, Spain
Pairing Notes: It is no secret that we are fans of the Valduero estate and of the wines that are produced by Yolanda. This Crianza, aged for 15 months in oak and 12 months in bottle, is no exception. Balsamic spices are laced with cumin and cloves, creating a magnificent experience with the Pork Filet and Dried Tomato Beurre Blanc.

2012 Chesebro Late Harvest Sauvignon Blanc, Cedar Lane, Arroyo Seco
Pairing Notes: Mark has not been able to produce this wine since 2009. Noble rot requires the perfect alignment of weather conditions in order to exist and affect the grapes properly. We enjoy flavors of honeysuckle, passionfruit, and white peach that have hints of almond. This is a treat to complement the Apple Gallette and Roasted Pecans.
