Pairing Notes: We are thrilled to begin the evening with bubbles from one of our favorite houses. This wine is predominantly Chardonnay. Pinot Noir and Pinot Meunier are added to finish the personality of the wine. The finish is elegant and perfectly balanced with notes of white flesh fruit, peach, and lemon zest.

2016 Metaphora Sauvignon Blanc, Napa Valley
Pairing Notes: This winery is a celebration of family and friends, momentous events, the ultimate symbol of living well. As such, Ravi Mehta presents us with this bright and vibrant wine, aged in concrete eggs and neutral French oak. The end result is this beauty, loaded with lush, soft flavors of mango, citrus, passion fruit which is perfect alongside the Scallop Ceviche.

2016 Paolo E Noemia d’Amico Chardonnay, Falesia, Lazio, Italy
Pairing Notes: Founded in 1985 by Paolo and Noemia, this estate produces spectacular wines out of Umbria and Lazio. This chardonnay is no exception. It features notes of almonds and lemon citrus and a distinct, creamy finish that lends itself to the Hawaiian Walu and Citrus Beurre Blanc. Pronounced faw-lay-zee-uh, but once you finish the glass it will still make you want to say, “Bye Falesia!”
third course
2013 Vandella Red Blend, Scarrow, Paso Robles
Pairing Notes: What began as a venture into his parent’s cellar back in 1995 has become the pursuit of recreating an experience from winemaker, Aaron Robinson. The notion is that Touriga Nacional could be to Mourvedre, what Cabernet Franc is to Cabernet Sauvignon. With an added hint of Syrah, the blend is outstanding and shows red cherry and dark plums that play well with the Beef Croquette.

2015 Elvio Cogno Barbera d’Alba, Pre-Phylloxera, Piedmont, Italy
Pairing Notes: This winery was formed in the footsteps of master wine maker, Elvio, and continues to produce wines that respect the history of the family today. Coming from an incredibly small plot of vines that are over one hundred years old, it is loaded with raspberry, blackberry, and ripe cherry. It is an absolute delight on its own, but somehow manages to be even more with the Beef Cheeks.

2015 Chateau La Rame Late Harvest Semillon, Sainte Croix du Mont, Bordeaux, France
Pairing Notes: Sainte Croix du Mont is located just on the other side of the Garonne River, opposite of the more well-known Barsac and Sauternes. The Armand family has invested in the region, to showcase the highly desirable Botrytised wines that show ripe nectar and honey. It has a great finish and is perfect beside the Meyer Lemon Custard.
